Chymotrypsin is a digestive protease that cleaves peptide bonds containing amino acids with phenyl ring side groups - tyrosine, tryptophan, and phenylalanine. Protea's chymotrypsin is highly purified, resulting in a product suitable for proteomics work. Chymotrypsin is a pancreatic protease, and for proteomics work, its digestions are optimally carried out at pH 8 in ammonium bicarbonate buffers.
